Apple & Blackberry Cake

Monday ~ like you need informing.

We have had snow flurries back for the last 3 days and this morning we had another sprinkling. Though in the City Centre Mr S has informed me they have had quiet big fluffy lumps falling again. He even sent me a little video at lunch (I do like snow).
I was right not to fully trust in the warmer spring weather being here for good, it nearly had me fooled.

Despite the snow being back the grey sky has not bothered me as it is accompanied this time by spring time splashes of colour.
(I’m a huge fan of Grey & Yellow – these are the Guest Room colours)

My Parents brought daffodils with them Saturday, just in time as the ones I brought faded. So the house is filled once again with happy yellow faces.

After the normal chores of today and clearing the final bits from Saturday.
I had the urge to bake and the house currently smells delicious if I do say so myself!

I mentioned Friday about the baking of The Good Food Magazines Apple & Blackberry Cake and then again Saturday that I had cheated and opted for the time saving Tarte au Citron by Sainsburys instead. So today having all the ingredients I baked it.

BBC Good Foods Apple & Blackberry Cake adapted to be Gluten Free.

4oz (125g) Unsalted butter
(plus extra for the tin)
4oz (125g) Caster Sugar
3 Beaten Large Eggs
A ‘Glug’ of Milk
2oz (50g) Ground Almonds
3 1/2 oz (100g) GF Self Raising Flour
3 Discovery, Russet or Worcester apples
(peeled and cored)
200g Blackberries

(Saving 12 segments of apple for the top of the cake)

Topping

2 tsp of Ground Cinnamon
2 tbsp Demerara Sugar
1oz (25g) Unsalted Butter
(cut into small pieces)
1oz (25g) Hazelnuts
(roughly chopped)
Icing Sugar (for dusting)

At this stage imagine the luscious smell of hot cinnamon filling the house
(Mr S described it as smelling of Christmas when he got home).

I’ve changed the recipe to use Gluten Free Flour, added a ‘glug of milk’ to compensate for the Gluten Free dryer texture, added more ground cinnamon to the topping (as I love it) and chopped hazelnuts as thats what I had. I recommend not adding to much more Demerara Sugar to the topping as it makes it to ‘wet’ rather than moist and crispy on top.

Even the Bunnies liked it as they got the apple peal and core the equivalent to sweeties for Rabbits.
As usual Our Male Bunny gave me affectionate kisses of thanks and Our Female Bunny was camera shy I did manage a quick photograph when she was caught off guard.

Alas tonight after tidying up after dinner I finally started to get the feeling that the dinning room and kitchen area are getting there. I have taken some pictures but will share these another day ~ As for our little family it’s now bedtime.
